A Simple Cookie

Ingredients

1 Cup Chopped Red Apple (with Skin)
1 Cup Chopped Baby Carrots
2 Cups Raw Almonds
3 Eggs (Pasture Raised)

2 Tbsp. Coconut Oil
2 Tsp. Vanilla Extract
2 Tsp. Cinnamon

Method

Preheat the oven to 350 degrees F. Grease a large baking tray with coconut oil and place to one side.

Combine all the ingredients in a food processor (except the eggs). Pulse until it resembles a coarse mixture. In a separate bowl whisk the eggs and then mix through the dry ingredients gradually.  Using your hands form 10 cookies.

Bake for approximately 30 minutes. Allow to cool before storing them in an airtight container.
