Banana Chocolate Bread

2 Pasture Raised Eggs
1 Cup Banana (Mashed)
3/4 Cup Nut Butter or Tahini
1/4 Cup Grated Beets
1/4 Cup 80%+ Organic Dark Chocolate (Small Pieces)
3/4  Cup Almond Flour
1/4 Cup Coconut Flour

1/4 Cup Raw Cacao Powder
1/4 Cup Maple Syrup
2 Tsp. Baking Powder
1 Tsp. Vanilla Extract
1 Tsp. Cinnamon
Small Pinch Sea Salt


Preheat the oven to 375F. Grease a loaf tin with coconut oil or line with baking paper.

Place eggs, maple syrup, nut butter, vanilla, cinnamon, baking powder, beets and mashed banana in the food processor and mix until smooth. Slowly add the almond flour a little at a time whilst the food processor is mixing. Using the same technique, add the coconut flour and cacao powder. Mix the chocolate pieces into the batter using a spatula and then pour the batter into the tin. Sprinkle a little sea salt on top of the batter and then bake for approximately 45 minutes.

Allow to cool before slicing into 10 pieces and individually wrapping in parchment paper. Best stored in the fridge.
