Raw Carrot Cake Balls

Ingredients

1/2 Cup Grated Carrots
3/4 Cup Raw Walnuts
3/4 Cup Unsweetened Shredded Coconut (Extra for Rolling)
8 Medjool Dates (Pitted and Soaked)
1/4 Cup Shelled Hemp Seeds
1/4 Cup Raw Honey (or B Grade Maple Syrup)

1 Tbsp. Maca Powder
1 Tsp. Grated Ginger
1 Tsp. Vanilla Extract
1 Tsp. Cinnamon
½ Tsp. Nutmeg

 

Method

Add the coconut, carrots and walnuts to the food processor and pulse until it resembles a coarse mix. Add the ginger, maca powder, pitted dates, honey and hemp seeds and pulse until they bind, resembling dough. Add the remaining ingredients and pulse for a few seconds.

Using your hands form small balls and then roll each in shredded coconut. Store them in a sealed container in the freezer for a few hours and then move them to the refrigerator.
