Chocolate Chia Pudding
2 Cups Unsweetened Coconut Milk
1/2 Cup Chia Seeds
2 Tbsp. B Grade Maple Syrup
2 Tbsp. 80%+ Dark Chocolate (Crushed)
2 Tbsp. Pistachios
1 Tsp. Vanilla Extract
1 Dried Fig (Finely Sliced)
Optional: 1/4 Cup Berries
Combine the coconut milk, chia seeds, vanilla and maple syrup in a bowl. Stir until the mixture begins to thicken and then cover and store in the refrigerator overnight.
The following morning, distribute the pudding mixture into two mason jars, adding water if the texture is too thick. Top the jars with dried fig pieces, pistachios and a little dark chocolate.
