Chocolate Pistachio Bark
1 Cup 80%+ Organic Dark Chocolate (Roughly Chopped)
1/2 Cup Coconut Oil
1/3 Cup Raw Pistachios
1/2 Cup Unsweetened Shredded Coconut
2 Dried Figs (Finely Sliced)
Pink Sea Salt
Place a glass mixing bowl over a saucepan of simmering water and add chocolate pieces and coconut oil (be cautious as the bowl becomes extremely hot).
Once everything is melted, remove from the heat and mix through the nuts, shredded coconut and fig pieces.
Line a loaf tin with parchment paper and pour in the chocolate mixture.
Place the tray in the freezer to set (approximately 1 hour). Once it has hardened, break into smaller pieces and store in the fridge.
