Nuts About No Oats
3 Pasture Raised Eggs
1 Banana Mashed
1/4 Cup Raw Walnuts
1/4 Cup Raw Pecans
1/4 Cup Unsweetened Coconut Milk
1 Tbsp. Nut Butter
1 Tbsp. Grated Ginger
1 Tsp. Ground Flax
1 Tsp. Cinnamon
Optional: Toppings such as berries, dried fruit or hemp seeds
Using a food processor, add the walnuts, pecans, flax and spices and pulse until it resembles a coarse flour.
In a separate bowl, whisk the eggs, coconut milk and nut butter. Add the mashed banana and mix through. Slowly add the dry mixture to the bowl, stirring continuously.
Place a small saucepan on low to medium heat and add a little coconut oil or grass-fed butter. Once melted, add the mixture to the saucepan, stirring occasionally. It should take roughly 3-5 minutes for the mixture to cook through.
Serve in a bowl and sprinkle with desired toppings.
