Pork Berry Skewers
1/2 lb. Pasture Raised Ground Pork
1/4 Cup Berries
1 Tbsp. Coconut Flour
Small Sprinkle Fennel Seeds
Sea Salt & Black Pepper
4 Bamboo Skewers
In a large bowl, mix the ingredients together using your hands. Form 4 small sausages and slightly flatten. Place the bamboo skewers through the sausage lengthways.
Heat a fry pan on medium heat. Add a little coconut oil and wait for it to melt. Place the skewers in the center of the pan and cook for approximately 3 minutes on each side or until done to your liking.
Serve with poached eggs and a mixed green salad.
