Raw Lime Cheesecake Bites

Ingredients

Crust
1 Cup Raw Macadamias
2 Tbsp. Coconut Flour
1 Tbsp. Coconut Oil
1 Tbsp. Maple Syrup
1 Tbsp. Tahini
1 Tsp. Vanilla Extract

Filling
1 Cup Macadamias (Soaked for a few hours in water)
1/4 Cup Coconut Oil
2 Tbsp. Unsweetened Coconut Milk
6 Medjool Dated (Pitted and Soaked)
2 Tbsp. Maple Syrup
2 Tbsp. Lime Juice
2 Tsp. Lime Zest
1 Tsp. Vanilla Extract

Method

Crust

Place all the ingredients in a food processor and mix until it resembles cookie dough. Press the dough into each of the cups (approximately a 1/4 inch deep) and place in the freezer whilst preparing the filling.

Filling

Using a food processor, add the drained macadamias, coconut oil and milk and pulse until smooth. Add the dates, vanilla extract, maple syrup, lime juice and zest and continue to mix, ensuring there are no lumps. Spoon the filling into each cup until 3/4 full. Garnish with a sprinkle of lime zest and place the cups back in the freezer for approximately 4 hours to set.

Remove 10-15 minutes prior to serving.

Makes 8-10 Cups
