Spinach and Goats Cheese Muffins

2 Pasture Raised Eggs
2 Cups Almond Flour
2 Cups Spinach Leaves
2 Tbsp. Soft Goats Cheese
1/4 Cup Raw Honey

3 Tbsp. Extra Virgin Olive Oil
1 Tsp. Baking Powder
1 Tsp. Baking Soda
1 Tsp. Vanilla Extract
Pinch Sea Salt


Preheat the oven to 350F. Line a baking tray with 12 smaller muffin cups or 6 larger cups.

Using a food processor, mix the eggs, olive oil, honey and vanilla extract. Add the spinach and mix until smooth.

In a large bowl add the dry ingredients. Slowly add the wet mixture, stirring until smooth.

Crumble the goats cheese into the mixture and lightly fold it through using a spatula.

Spoon the mixture into the cups and bake for approximately 15 – 18 minutes or until golden on top.

Allow to cool and then store in the refrigerator for up to one week.

Makes 6 Larger or 12 Smaller Muffins
