Swedish Meatballs with Mash

Ingredients

Meatballs
1/2 lb. Grass Fed Ground Beef
1/2 lb. Pasture Raised Ground Pork
1/4 Cup Grass Fed Cream
1/2 Small Yellow Onion (Crushed)
2 Tbsp. Grass Fed Butter
1 Egg Yolk
1/2 Cup Almond Meal
1 Tsp. All Spice
Pink Sea Salt & Black Pepper

Mash
1 Large Head of Cauliflower
2 Small Sweet Potatoes (Peeled and Cubed)
2 Large Cloves Garlic (Peeled)
2 Tbsp. Grass Fed Butter
1/2 Cup Coconut Milk

Method

Step 1 – Prep

Add the almond meal, cream, egg yolk and meatball spices to a large bowl and mix together. Allow this mix to sit for approximately 2o minutes and the meal to absorb the liquid.

Steam or boil the sweet potato until tender. During this time, cut the cauliflower into florets. Add the florets and garlic to a steamer pot.  Steam until the florets are tender.

Step 2 – Meatballs

Place a large pan on medium heat and melt 1 tablespoon of butter. Fry the onion until it becomes translucent (approximately 3 minutes). Remove from stove and allow to cool. In the meantime, combine the almond meal mix with the meat in a large bowl using your hands. Add the cooled onion and form 1.5″ balls.

In a large pan on medium heat, melt the remaining butter. Add the meatballs turning every couple of minutes, until brown and to your liking.

Step 3

Add sweet potato, cauliflower and garlic to the food processor and mix. Add 2 tablespoons of butter and continue to mix.  Slowly add the coconut milk, a little at a time until it resembles the desired consistency. Season with sea salt and black pepper to your liking.
