Sweet Potato Toast

Ingredients

1 Medium Sweet Potato (Peeled and Sliced into Long Strips)
1 Tbsp. Coconut Oil
1/2 Cup Baby Tomatoes (Quartered)
1/4 Cup Black Olives (Roughly Chopped)
1/4 Cup Red Onion (Finely Diced)
1/2 Avocado (Ripe)

2 Tbsp. Fresh Cilantro (Roughly Chopped)
Juice 1/2 Lime
2 Slices Bacon (Chopped into Small Pieces)
Splash Chili Sauce (Sugar Free)
Pink Sea Salt

 

Method

Preheat the oven to 400 degrees F.

Brush each side of the sweet potato slices with a little coconut oil. Bake for 20 minutes on each side or until cooked.

In a small bowl combine tomatoes, olives, cilantro and red onion and place to one side. In another small bowl mash avocado, add lime juice, a small sprinkle of salt and a little splash of chili sauce.

Cook bacon pieces in a fry pan on medium heat for approximately 3 minutes each side or until crispy.

To assemble sliders, spread guacamole on the base, then sprinkle roughly 1 tablespoon of salsa and then top with crispy bacon pieces.
