Vanilla Chia Pudding

Ingredients

2 Cups Unsweetened Almond Milk
1/2 Cup Chia Seeds
2 Tbsp. B Grade Maple Syrup
½ Tsp. Vanilla Extract

1/4 Cup Fresh Berries
2 Peach Slices
1/4 Cup Crushed Pistachios

Method

Combine almond milk, chia seeds, vanilla and maple syrup in a bowl. Mix well until the mixture begins to thicken and then store covered in the refrigerator overnight.

The following morning, distribute the pudding mixture in two mason jars, adding water if the texture is too thick. Top the jars with berries, peach slices and the crushed pistachios.

This will keep in the refrigerator for up to 4 days.

Tip: If you have insulin resistance or suffer from diabetes, stevia can be a good alternative to maple syrup. Please remember that stevia is extremely sweet so it is advised to experiment with a small amount and then adjust as needed.
