1 Cup Zucchini (Peeled and Diced)
1/3 Cup Tahini
1/4 Cup Lemon Juice
1 Garlic Clove (Crushed)
2 Tbsp. Nutritional Yeast
1 Tsp. Cumin
Using a food processor, add all ingredients and pulse until smooth. Store in a sealed mason jar in the refrigerator.
Zucchini hummus is great as a salad dressing, eaten with vegetable sticks or served with grilled chicken, lamb or fish.
