Almond Crusted Halibut

Ingredients

2 Wild Caught Halibut Portions
1/3 Cup Sliced Almonds
Zest 1 Lemon
1 Tsp. Garlic Powder
2 Tsp. Dijon Mustard
Pink Sea Salt & Black Pepper

 

 

Sauce
1/2 Cup Cold Pressed Olive Oil
1 Cup Cilantro (Remove Stems)
1 Tbsp. Lemon Juice
1/3 Cup Green Olives (Pitted)
Optional: 1 Tsp. Red Boat Fish Sauce

Method

Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment  paper and set to one side.

Season each halibut fillet with salt and pepper. Spread a teaspoon of mustard on each fillet, sprinkle with the lemon zest on top and then pat the almond slices on firmly. Place each fillet on the baking sheet and bake for approximately 12 minutes.

In the meantime, add all the sauce ingredients to a food processor and mix until smooth. Once the fish is done, turn the broiler to high to lightly toast the almonds (takes approximately 1 minute).

Serve the fish with a nice drizzle of the green sauce and a side salad or potatoes.
