My Special Egg Salad
12 Pasture Raised Eggs (Hard Boiled & Peeled)
1 Cup Sugar Free Bacon Pieces (Fried and Crunchy)
1/2 Red Onion (Finely Sliced)
1/2 Cup Frozen Seedless Grapes (Cut into Quarters)
Homemade Mayonnaise (Try My Simple Recipe)
Using a large bowl, roughly mash the boiled eggs with a fork. Add the bacon, onion and grapes and mix through. Add a big scoop of mayonnaise and stir through, ensuring all the ingredients bind (roughly a 1/4 cup).
Best served on romaine lettuce boats or on sweet potato toast.
